Wine and Cheese Pairing 2

     Wine:

Fino - Dona Luisa:

I was surprised when I poured this wine because I assumed it would be red, but nope - white wine. It is a dessert Sherry that has extremely prominent pear and green apple scent and flavor. It is probably a bit too sweet for all of the cheeses, but we will find out :)

Sangria - Sol de España:

One of the sweetest, low-alcohol wines you will come across. With every sip, it is fruit and berry galore. Some of the flavors that I could make out were orange, cherry, strawberry, and maybe even apple.

Cabernet Sauvignon - Substance, WA:

The Cabernet Sauvignon is very tangy, tannic, and borderline vinegary. It is certainly not the kind of wine you want to drink by itself, whether it is light-bodied (in this case, it is) or heavy and bold.

Cheese:

Parmesan Cheese - Lucerne:

In my opinion, parmesan is not meant to be combined with any kind of wine. Maybe it's because it was crumbly, or maybe because it did not do anything to help or hurt any of the wines (though the Sauvignon gets worse with ever sip). The experience with pairing the parmesan to the Fino was very bland -- while the cheese is a fun addition on things like pasta, it does not work here, especially with how sweet the Fino is, overpowering any flavor the cheese has.

Le Gruyere - Switzerland:

This cheese has a little spicy kick to it, and it is more on the dry side as opposed to the gouda, which is closer to a liquid, but not as dry as the parmesan. I paired this wine with the Sangria, and I think that it is one of the more favorable combinations because the sweet of the wine complimented the harsh spiciness of the cheese, evening it out.

Gouda - Dutch Tradition:

I paired this cheese with the Cabernet Sauvignon. While I would normally expect such a thick and nearly viscous cheese to pair well with a heavy body like Cabernet Sauvignon, this particular wine was a thin Cab Sauv, and thus, it did not pair well. The dry tangyness of the wine clashed with the smooth thickness of the gouda, and even the swiss cheese did not pair well.
